Classic American Barbecue Chicken

For a foolproof method of telling whether your chicken is cooked through, insert a meat thermometer into the thickest part of the breast. It should read 165ºF, but note that the temperature of the chicken will continue to rise 5 degrees once you remove it from the heat.

Serves 6-8

Ingredients

2 tablespoons vegetable oil

1 yellow onion, chopped

2 15-ounce cans tomato sauce

1 cup red wine vinegar

1 teaspoon prepared mustard

1⁄2 cup molasses

1⁄4 cup Worcestershire sauce

1⁄3 cup packed brown sugar

3⁄4 teaspoon cayenne pepper

2 chickens, split in half

Heat oil in skillet over medium heat. Add onion and sauté until tender (about 10 minutes). Mix in tomato sauce, vinegar, mustard, molasses, Worcestershire sauce, brown sugar, and cayenne. Heat to boiling over high heat, stirring frequently. Reduce heat and simmer, uncovered, 30 to 45 minutes or until sauce thickens slightly.
